Recipe- Creamy Cheesy Chicken

I love crock pot recipes!  Unfortunately, I leave for work at 7:30 am and we don't eat dinner until 7:30pm, so that's a little too long to leave things cooking.  But I love to use the slow cooker on weekends when I can!

I'm not sure where I got this recipe either--its been in my recipe box!

Creamy Cheesy Chicken

~chicken breasts
~2 Tbs Butter, melted
~salt & pepper to taste
~2 Tbs Italian salad dressing mix
~10 3/4 oz can cream of mushroom soup
~ 8oz package of cream cheese
~1/2 cup white win
~1 Tbs onion, chopped
~rice, cooked

1) Brush chicken with melted butter, sprinkle with salt and pepper
2) Arrange chicken in slow cooker; sprinkle dressing mix over top
3) Cover and cook on low for 6 to 7 hours
4) About 45 minutes before serving, mix soup, cream cheese, wine, and onion in a saucepan; cook and stir until smooth
5) Pour over chicken in slow cooker; cover and continue cooking on low for 45 minutes.
6) Serve over cooked rice

The sauce is soo yummy!  I love to serve croissants with this so I can get all of the extra sauce!  This makes for some great leftovers too!

Weekly Recap- April 22-28, 2013

Lots of running stores had a Run For Boston run on Monday.  I wanted to go so badly, but I had softball that night and the closest store participating was 40 minutes away.  I wouldn't have been able to make softball and didn't want the team to forfeit because I wasn't there.  So I ran 4.09 miles again on Tuesday.  Lately, I have been running a minute longer each time at the beginning before I start my 2:1 intervals but on Tuesday, I just went back to intervals.  And I was 2 minutes faster.  I think I might still do the straight running at the beginning to try to work on endurace.  Or maybe only due it on the 3 and 4 milers.  I skipped running on Thursday because its too hot to run until evening and we had a Chickfila Spirit Night for my school.  Then yesterday, I was in Denver and I was planning on bringing running clothes until I was told to only bring a carry on and I barely fit everything in there as it was, much less my running stuff.  Boo!

Here's a picture of me and the hubby before his parent's 40th wedding anniversary

Tuesday-4.09 miles in 41:19 (Mile 1: 10:07, Mile 2: 9:58, Mile 3: 10:32, Mile 4: 9:57, Mile 4-4.09-8:29, average pace: 10:06)

Total miles this week: 4.09
Total miles in 2013: 145.15
Total miles: 574.42

Disney Dream Cruise--Day 4, April 10, 2013

Today was the Day at Sea, so a lazy day.  I didn't take a lot of pictures.  We slept in, spent most of the day at my favorite adult pool, and drank a lot of my favorite drinks from the room (with banana fro-yo!)

We got dressed to see the show, Believe.  I forgot to snap a picture--FAIL!  But it was far and beyond the best show of the cruise!  I loved all the songs, the characters fit, and the scenes were great!  I'd love to see it again!

We had some time after the show, so we wandered into Pink.  Natalie and I needed a picture!

Our dinner that night was in the Enchanted Garden.

The Enchanted Garden definitely had my least favorite of the menu offerings
For the appetizer, I had the Thyme and Garlic Brioche.  It was good.
For soup, I had the Cream of Green Asparagus soup
For salad, I had the Romaine Wedge
And the main course
I didn't like any of the regular choices, so I ordered off the Ligther Note--Grilled Grain-fed Sirloin Steak.
I had the Banana Foster Sundae...annnnd the Creme Brulee (no picture of this though)

We were sad it was the last night.  But we needed a picture with Nue and Phillip
While we were taking pictures, some of the other servers stole my phone and took some self portraits :)
We needed a whole table shot
We headed up to Evolution to play a music trivia game.  The Knight Magic show was going to be a repeat performance after.  Rafael got asked to be in it so we decided to watch again.  And we learned one of the secrets of the tricks!

It was fun!  We said goodnight to Natalie and Rafael and headed to bed and saw our last towel animal.  A penguin!

Disembarkation the next morning was simple.  You could choose to put your bags out the night before and then pick them up off the boat.  Or you could keep your luggage and carry it off yourself.  We choose that route.  Then in the morning, you could choose to go to breakfast in the dining rooms at a certain or skip breakfast and head off the boat at your own time.  We chose that one.  It was all pretty quick.  The only line we ran into was at customs.  But that took maybe 10 minutes.  The line was continuously moving.
We had so much fun!  I can't wait until we're able to go again!

Disney Dream Cruise--Day 3, April 9, 2013

Today was the Castaway Cay day.

We woke up bright and early to do one of the things I was most excited about--run the Castaway Cay 5k!!  You can read my complete Race Recap here.  Another runDisney bib and medal to add to my collection!

After the race, Kory headed to the adult beach but I headed back to the ship.  I'm always hungry after short runs and lunch wasn't for another couple of hours on the island.  I changed into my bathing suit, grabbed some breakfast, and headed back out to the island.

The adult beach is so nice and quiet and peaceful!  I ordered my favorite drink--a BBC.  Yum!

Natalie was down the beach and called me on the wave phone to let me know Jack Sparrow was coming!

We had the bbq lunch on the island--yummy.  Then we headed back to the beach for about 5 minutes.  I am not a beach fan.  I'm too antsy to sit still and won't go in the water (especially since Kory had seen a sting ray out there earlier in the day).  So we headed back to the family side of the island.  I agreed to try the slides but it was too cold so Kory went on his own.  Natalie and I looked around the shops some.

Kory knew I was growing bored, so we headed back to the boat.

We made a drink in our room (the banana fro-yo made another appearance) and headed up to the adult pool.  I LOVE this pool.  There was this really shallow part (like inches deep) where you can sit in the water and be cool and still tan.  I need one of those around here!

We stayed there for a little while then headed back to the room to get ready.  Then we went to see the show Kyle Knight & Mistie.  They were doing another magic show.  It was good and interesting, but I prefer the broadway style of shows.

Then we headed up to dinner at Palo

The menu

Palo's Cold & Antipasti Specialties (halfway eaten)

Freshly Baked Palo Bread

I had the Grilled Portabello Mushroom and Polenta.  This was the BEST thing I had on the cruise.  Soooo good!  I want it again!  (and it had my cheese crisp that I had already eaten by the time I snapped the pic!)  Kory had Fritto di Calamari (he got mad that I was always taking so many pictures so this is the last one of his food that I have.)

There was what I think was a lemon sorbet next

I had the Wild Mushroom Risotto.

From the La Carne menu, I had Our Beef Tenderloin "Palo".  The gorgonzola sauce was yummy!

For dessert, I had the chocolate souffle

Now, I have to say it...I was EXTREMELY disappointed with Palo.  Our server was pretty horrible.  He was completely distracted the whole time.  He would be talking to us and then yelling to another server at the same time.  Or he'd walk away then in the middle then come back.  He didn't explain any of the dishes to us.  I asked him which one he'd prefer: the mushroom risotto or the steak.  He just walked away then during the dinner, brought out both.  I didn't want both.  I wanted his opinion.  I guess being a cast member, I have high expectations for fellow cast members.  And being that this was an upgraded restaurant, this shouldn't happen.  The food was okay.  It had my favorite thing of the whole ship, but the rest was only as good as the food in the regular dining rooms.  And I definitely preferred our regular servers.  I'm hoping this is a rare occurance.  I'd give Palo one more chance since I've heard such rave reviews about it.  I'm sad that our experience was lacking.

We headed back to the room for a second and found our towel animal--a hippo!

I forgot to take a picture of us at dinner and wanted a picture of my dress so I snapped one really quickly.

We headed upstairs to the deck to watch the fireworks for Pirate night.  I was excited--I love fireworks and the idea of seeing on the ship was neat!  Made the night end on a high note.
